Pancakes or Waffles (Orpha Whitlock)

2 eggs separated.  Beat whites until they peak and set aside.
Beat yolks and add:
2 C milk
2 C flour
4 tsp. baking powder
3/4 tsp. salt
4 Tbs. melted shortening or oil
Fold in beaten egg whites.
Cook on griddle or in waffle iron.


Maple Syrup

 Bring to boil:
2 C sugar (can use 1 C brown sugar)
1  1/2 C water
Add:
1 tsp. vanilla
1/2 tsp. mapeline

Raised Meatballs (Orpha Whitlock)

Mix in large bowl:
1 lb. hamburger
2 slices bread
1/4 C hot milk
2 Tbs. chopped onion
1 egg
2 tsp. baking powder
1/8 tsp. salt
1/4 tsp. pepper
1/2 tsp. sage (optional)
1/8 tsp nutmeg (optional)

Shape into meatballs & brown in frying pan.  Put in casserole dish and cover with sauce of 1 can cream of mushroom soup, 1 can cream of chicken soup and 1 can milk.  Cover dish.
Bake at 350 degrees for 60 minutes.  Serve with rice, potatoes or noodles.

Orange Baker Pork Chops

6 loin pork chops
1/2 C orange juice
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. dry mustard
1/4 C firmly packed brown sugar.

Place chops in shallow baking dish.  Combine remaining ingredients & pour over chops.  Cover.
Bake at 350 degrees for 1 hour.  (Can also be done in a crockpot - about 6 hours.)

Soup Dumplings

1 egg
scant 1/2 cup milk
2 Tbs. salad oil
1 cup flour
1/2 tsp. salt
scant tsp. baking powder

Drop by spoonfuls into boiling soup and steam 10 to 15 minutes.

Broiled Coconut Frosting

3 Tbs. butter
1/3 C brown sugar
2 Tbsp. cream
1/2 C coconut
Chopped Walnuts
Spread on white cake and broil 3 - 5 minutes.

Raisin Filled Oatmeal Cookie Bars

1 tsp soda
1/2 tsp salt
2 C flour
2 C oatmeal
1 C brown sugar
1 C shortening
1 egg
1/2 tsp vanilla

Raisin Filling - Boil
1 C raisins
1/2 C water
1/2 C sugar

Divide cookie dough in half and put half on bottom of greased cookie sheet.  Add raisin filling.  Top with the rest of the cookie dough.  Bake 30 minutes.    Mom had a note to double this.  She used a large cookie sheet.  This was one of Uncle Charles Whitlock's favorite cookies.

Raspberry Dessert (Orpha Whitlock)

Crust:
2 C flour
1/2 C brown sugar
1 C butter
1/4 C chopped nuts
Bake in cake pan at 350 degrees for 15 minutes.

Mix and pour on crust:
1 8 oz cream cheese
1 C powdered sugar
2 pkgs. dream whip
Set in fridge for 2 hours.

Topping:
1 Danish Dessert
2 pkg. frozen raspberries (use juice from raspberries)
Cook and put on top and refrigerate.
