Egg Nog (2 recipes)

Egg Nog
1/2 C vanilla pudding mix
3 eggs (beaten well)
1/3 C sugar
7 cups milk
1 tsp. vanilla
1/4 to 1/2 tsp rum flavoring
nutmeg sprinkled on top


Egg Nog (I think she used this one when they said we shouldn't be drinking raw eggs.)
2 qts. milk scalded
Add 1/2 C sugr and 1 rounded tsp. cornstarch
3 eggs (beaten well)
1/4 tsp. salt

Cook to a boil after adding sugar, salt and cornstarch to scalded milk.
Add eggs and cook a few minutes but do not boil.
Cool/Chill
Add rum flavoring to taste and sprinkle with nutmeg to serve.

Slush

12 oz. can frozen orange juice
1/2 C. lemon juice
5 well mashed bananas
4 C. pineapple juice
3 C. sugar
6 C. water

Boise sugar and water 10 minutes.  Cool and add other ingredients.  Freeze in large plastic ice cream containers.  When ready to use put frozen mixture in a punch bowl.  Cut into pieces.  Add 2 quarts 7-up or gingerale to each 1/2 gallon.  Serve while slushy.

Apple Crisp (from Symm's Orchard in Idaho)

8 medium apples, peeled and sliced
3/4 C sugar
Juice of 1/2 lemon
Place in pan.
Topping
1/2 C brown sugar
1/2 C butter
1 C flour
Mix together and sprinkle over apples.
Bake 1 hour at 350 degrees.

Carrot Pudding and Vanilla Sauce

1 cube butter
1 C sugar
1 C grated carrots
1 C raisins
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. cloves
1 C chopped walnuts
1 C grated raw potato
1 rounded tsp. soda mixed in potatoes
1-1/2 C flour
pinch of salt

Steam 3 hours. (I seems like mom used the double boiler for this or put the batter in canning jars and steamed them in a big pot of water.  Maybe it would work in the oven with a pan of water under it for less time????)

Vanilla Sauce
Mix 3/4 C sugar and 2 Tbsp cornstarch
2 C boiling water
Add boiling water to sugar mixture slowly and stir constantly.  Boil 5 minutes.
Remove from heat and add 2 Tbsp. butter and 1 tsp. vanilla.  Serve hoot over Carrot Pudding.

Lemon Sauce - Same procedure as Vanilla Sauce
1 C sugar
2 Tbs. cornstarch
2 C boiling water
2 Tbsp. butter
1 lemon (zest and juice)

Peppermint Stick Dessert

1 pkgs. vanilla wafers (crushed)
1 pint whipping cream (whipped)
3 Tbls. powdered sugar
1/2 pkg. small marshmellows
1/2 C chopped nuts
3 peppermint sticks (crushed)

Put half of crushed vanilla wafers in bottom of large 9X12 pan.  Whip cream, add powdered sugar.  Fold in marshmellows, nuts and peppermint crumbs.  Pour into baking pan and top with remaining wafer crumbs.  Let set overnight in refrigerator.  Serves 16 - 20.

Ozark Pudding (Orpha Whitlock)

1 egg
3/4 C sugar
4 Tbsp. flour
1-1/4 tsp. baking powder
1/8 tsp. salt
1/2 C nuts
1 C chopped apple (originally recipe called for 1/2 C)
1 tsp. vanilla

Beat egg and sugar.  Combine flour, baking powder and salt and stir into egg mixture.  Add nuts, apples and vanilla.
Bake at 350 degrees for 35 minutes. 
Serve warm with whippeed cream or ice cream.

Sponge Cake & Creamy Pineapple Frosting (Orpha Whitlock)

1-1/4 C sifted flour
1 C sugar
1/2 tsp. baking powder
1/2 tsp. salt
6 egg whites (large)
1 tsp. cream of tartar
1/2 C sugar
6 egg yolks
1/4 C water (1/3 C for high altitude)
1 tsp. vanilla

Sift together flour, 1 C sugar, baking powder and salt.  In a large mixing bowl, beat egg whites until frothy.  Add cream of tartar.  Gradually beat in 1/2 C sugar a little at a time, beat until whites form stiff, not dry peaks.  In a small bowl, combine egg yolks, water, vanilla and sifted dry ingredients.  Beat at medium high speed for 4 minutes or until mixture is light and fluffy.  Fold yolk mixture gently, but thoroughly into the beaten egg whites.  Turn into an ungreased 10" tube pan.  Bake at 350 degrees (375 degrees for high altitude) for about 45 minutes. Invert pan to cool.  Frost.

Creamy Pineapple Frosting
Cream:
1/4 C butter
14 C shortening. 
Gradually add 3 C sifted powdered sugar.  Beat until light and fluffy. 
Blend in 1 (8-1/2 oz) can well drained, crushed pineapple, 1/8 tsp. salt, 1/4 tsp. vanilla and 1/2 tsp. grated lemon rind.

Divinity

Mom got this recipe from Carole Griffin  - I've made it a lot but never on a rainy day.  Sheri

2 C sugar
1/2 C Karo white corn syrup
1/2 C hot water
1/4 tsp. salt
2 egg whites
1 tsp. vanilla

Stir first 4 ingredients 'til completely dissolves.  Wipe sides of pan with damp cloth.  Have lid on 'til strikes a boil.  Boil until firm ball. 
Pour over stiffly beaten egg whites.  Add vanilla and beat 'til it looks like it will hold shape when dropped by teaspoon.  Add nuts if desired. 

Nutty Popcorn Balls (Beth Ann Willden)

Combine and cook to soft ball stage.
1 C white sugar
1 C brown sugar
1 C honey
1 C light Karo syrup
1 C evaporated milk

Cool to near room temperature.
Pour over
12 quarts popcorn
12 oz. mini marshmallows
2 C peanuts (optional)

Form into balls.  (Damp hands work best here.)

Soft Caramel Popcorn

Rae Lou usually doubled this.

1/4 C butter or margarine
1 C brown sugar
1/2 C light corn syrup
2/3 C sweetened condensed milk
1/2 tsp. vanilla
pinch of salt

5 quarts popped corn

In saucepan combine butter, brown sugar, & corn syrup.  Stir well and bring to a boil over medium heat.  Stir in condensed milk, stirring constantly, till mixture comes to soft-ball stage (234 degrees or less).  Stir in vanilla & salt. Pour over popped corn.

You can add peanuts and mini marshmellows. 

Honey Cookies (Orpha Whitlock)

1 C honey
1 C shortening (1/2 can be butter)
1 C sugar
2 eggs
1 tsp. salt
1/2 C warm water and 1 tsp. soda (mix together)
Optional - scant tsp. ginger (Orpha didn't use it)
Add enough flour to roll - 5 to 6 cups

Refrigerate 1/2 hour.  Roll into desired shape.
Bake at 350 degrees for 10 minutes or until lightly browned. 

Applesauce Chocolate Chip Cookies

1/2 C shortening
1 C sugar
2 eggs
2 1/4 C sifted flour
(Can substitute 2 1/2 C oatmeal for 1 C flour)
1 tsp. soda (Mix soda and applesauce together)
1 C applesauce
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. cloves
1/2 tsp. salt
1 C chopped nuts
1 pkg. chocolate chips

Bake at 400 degrees 9 to 12 minutes.

Picnic Cake

Mix and cool:
1 C cut dates or raisins
1 1/2 C hot water

Cream:
3/4 C shortening
1 C sugar
2 eggs

Sift:
2 C flour
1 tsp. soda
1/2 tsp. salt
1 tsp. vanilla
1 tsp. cinnamon

Mix together and put in 9X12 pan.

Topping: Put on top of cake batter.
3/4  C brown sugar
1 C chocolate chips
1/2 C chopped walnuts

Bake at 350 degrees 40 minutes.

Old Fruit Cake

1 quart old fruit (any kind - juice and all) blended
4 1/2 C flour
3 C sugar (less)
1 C oil
4 tsp soda
1 Tbls vanilla
1 egg
2 tsp cinnamon
1/2 tsp cloves
1 tsp. salt
1 tsp. nutmeg
Add nuts, raisins, chocolate chips, cut up spice drops.

Bake at 325 degrees 45 to 60 minutes.

Texas Sheet Cake (Hazel)

Could this be Grandma Orpha Whitlock's sister?
No pan size was mentioned but I think it is the bigger cookie sheet pan.

Combine:
2 C flour
2 C sugar
1/2 tsp. salt

Boil:
1 C water
2 cubes margarine
4 Tbsp cocoa

Add:
2 eggs
1/2 C sour cream
1 tsp. baking soda
Nuts

Bake at 400 degrees 15 to 20 minutes

Icing
Boil:
1 cube margarine
4 Tbsp cocoa
6 Tbsp milk

Add:
Powdered sugar and nuts.
Put on cake while still hot.

Zuchinni Bread

2 C sugar
1 C oil
4 eggs room temperature
3 tsp. orange peel
3 C flour
4 tsp. baking powder
1 C nuts (optional)
1 tsp. vanilla
1 tsp. soda
1 tsp. salt
1/4 tsp. mace
1/4 tsp. nutmeg
1/4 tsp. alspice
2 C grated zuchinni

Beat eggs, add sugar and oil.
Mix in dry ingredients.
Add vanilla.
Fold in zuchinni.

Fill pans half full.  Bake at 325 degrees 40 minutes to 1 hour.

Turkey Pillows (Sheri)

Mix together:
2 C cubed turkey (or chicken)
1 8 oz. pkg. cream cheese
Salt and Pepper to taste
Optional: green onions

2 Pkgs. Crescent Rolls

Roll turkey mixture in individual crescent rolls.
Roll each pillow in melted margarine (or milk for less calories) and then fine bread crumbs.
Bake at 375 degrees for 15 minutes.

Serve with Turkey Gravy.

Rae Lou also used left over roast beef instead of turkey.

Caramel Dumplings (Orpha Whitlock)

Bring to boil (in electric frying pan):
3 C water
1/2 square margarine
1 C brown sugar

Mix together:
1 C flour
1/4 tsp salt
1/4 C sugar
2 tsp. baking powder
6 tsp. oil
1 egg
about 1/4 C milk

Drop by teaspoonfuls into brown sugar mixture.  Steam for 20 minutes.
Serve hot with whipped cream.
Serves 6-8.

Cole School Granola Cookies

These are the ones Rae Lou always had on hand.

3 C  brown sugar
3 C  white sugar
5 1/2 squares margarine
1 C eggs (about 5)
6 C flour
1 Tbls. baking powder
1 tsp. salt
1 Tbsp. vanilla
2 tsp. soda in 1/2 C milk
3 C oatmeal
3 C rolled wheat (Zoom cereal)
Additional Add Ins:
2 C raisins
2 C nuts
2 C chocolate chips
Coconut

Bake at 350 degrees 5-7 minutes.  (It originally said 15 - 17 minutes but she had crossed out the "1"s.) 

Texas 4-Layer Pie

Crust:
1 square softened butter or margarine
1 C flour
1/2 C chopped walnuts
Mix together and press into 9X12 baking pan.
Bat at 350 degrees for 13 minutes.  Cool.

2nd Layer:
8 oz. cream cheese
1 C powdered sugar
1/2 9 oz. carton whipped topping

3rd Layer:
2 small pkgs. instant pudding (chocolate or butterscotch)
3 C milk

4th Layer:
Whipped Topping

Oven Baked Chicken (Karen)

1 Fryer - skinned and cut in pieces

Dip in melted butter and roll in prepred crumbs and plance in foil lined pan.

Crumbs:
1 C fine bread crumbs
3/4 tsp. paprika
3/4 tsp. garlic salt
3/4 tsp. accent
1 tsp. salt
pepper

Bake at 350 degrees about 1 1/2 hours.

Taco Salad (Elayne)

1 bag Salad Mix
Big Can Kidney Beans
Chopped Tomatoes
Add right before serving:
Crushed Nacho or Cheese flavored Chips (Doritoes)
Thousand Island Dressing
Grated Cheese

Taco Soup

1/2 lb. ground beef (browned with onion)
1/2 diced onion
1/2 diced green pepper
1/2 diced red pepper
15 ounce can red beans
10 ounce can corn (undrained)
28 ounces canned tomatoes
1/2 C mild salsa
1/2 pkg. taco seasoning
Cook in crockpot for 2 hours.

Sloppy Joes

5 lbs. ground beef
3/4 C diced onions
1/3 C chopped celery
1/2 C diced green peppers
1 Tbls. dry mustard
1 Tbls. worchestershire sauce
1 Tbls. salt
1/4 C lemon juice
1/2 C white vinegar
1/2 C water
1 Qt. catsup
1/2 C brown sugar

Egg Casserole (Diane)

8 eggs
2 C milk
1 lb. sausage (browned)
6 slices white bread cubes
1 tsp. salt
pepper
1 tsp. dry mustard
1 C cheese
Mix, chill overnight in greased 9X13 pan.  Bake at 350 degress 1 hour. 
Can add tomoatoes, green peppers, mushrooms, etc.

Raspberry Apple Salad (Gladys?)

3 pkgs. raspberry jello
2 pkgs. frozen raspberries
1 can whole cranberry sauce
1 to 1 1/2 C chopped nuts
4 small apples - grated
3 C boiling water
2 C cold water
Dissolve jello in boiling water.  Add other ingredients.
Let gel - Serves 18

Carrot Soup

1/2 C butter
5 medium carrots
1 onion
1 tsp. salt (to taste)
4 C chicken stock
1/2 C rice
1 C half & half

Sugar Cookies (Nora C.)

I believe this is great-grandma Elnora Christiansen's recipe.


Cream together:
4 eggs
2 C sugar
1 C shortening
1 C thin cream (half & half ?)
2 Tbs. vanilla
2 small tsp. salt
6 tsp. baking powder
5 C flour

Make batter stiff enough to roll in small balls by hand.  Then dip in sugar and press with a fork that has been dipped in milk.
Bake at 350 degrees for 10 minutes.

Sweet Rolls

1 pkg. yeast
1/4 cup warm water

1 C scalded milk
1/2 C sugar
1 tsp. salt
1/4 C shortening
2 eggs
4 - 5 C  flour

Let rise until double (about 1 1/2 hours).
Punch down.  Let rest 10 minutes.  Shape into rolls.
Bake at 350 degrees about 20 minutes.

Mom had several sweet roll recipes but this one looked the most used.  She sometimes made twists and then put  pineapple frosting on them.

Pineapple Frosting
1 medium can crushed pineapple - well drained
Powdered sugar to spreading consistency.
2 rounded Tbsp. shortening. 
Add a little jam or a marachino cherry on top or sprinkle with nuts or coconut. 

Clam Chowder

Grandpa Elden Erick made this a lot.

1 8 oz. can minced clams
1 C chopped onion
1 C chopped celery
2 C diced potatoes
Simmer with clam juice until tender.

Make white sauce.
1&1/2 squares butter or margarine.
3/4 C flour
1 quart 2% milk
1 tsp. salt

Combine  two mixtures.

Rhubarb Crunch (Sheri)

8 C diced rhubarb
Place in greased 9X12 pan

Mix and stir into rhubarb
2 C sugar
6 Tbls flour

Topping
2 C brown sugar
2 C rolled oats
1 1/2 C flour
2 squares butter or margarine
Mix witih pastry blender until crumbly.
Sprinkle over rhubarb mixture.

Bake at 375 degrees for 45 minutes.
Serve with ice cream or cool whip.
